Mugwort, or Artemisia vulgaris, is an aromatic and slightly bitter green. It is edible cooked or raw and is best used before the mugwort flowers. Before hops, mugwort was used to flavor beer!!
Use the leaves and buds for a bitter flavoring seasoning in fatty foods such as meat and fish. Martha Stewart also has a delicious mugwort soup recipe for early summer! You can check out foraging blogs for additional uses - one of my favorites is Black Forager. Mugwort is used in many Chinese, Korean, and Japanese dishes, especially soups and seafood. Take a walk on the wild side and try some mugwort for a new and different culinary experience!
